Ingredients
100g FREEE Plain White Flour
1 tbsp icing sugar
1/4 tsp xanthan gum
50g butter
1 egg
1–2 tsp milk
4 tbsp jam of your choice
Butter, for greasing
Extra flour, for dusting
Method
- Preheat the oven to 190°C (170°C fan). Lightly grease a 12-hole tart tin.
- Combine the flour, icing sugar and xanthan gum in a bowl. Rub in the butter until the mixture resembles fine breadcrumbs.
- Add the egg and enough milk to bring the mixture together into a soft dough. Cover and allow the dough to rest for 5 minutes.
- Lightly dust a work surface with flour and roll out the dough to approximately 3mm thick.
- Cut out circles slightly larger than the tart tin holes and gently press them into the prepared tin.
- Spoon about 1 teaspoon of jam into each pastry case, taking care not to overfill.
- Bake for 20–25 minutes, until the pastry is lightly golden.
- Allow the tarts to cool slightly before removing from the tin. Serve warm or at room temperature.
