Little Farms Kofta with Little Farms Pita & Hummus
Ingredients
- Lamb Kofta x 2
- Little Farms Pitta
- Little Farms Hummus
- Pickled Onions – mix all the ingredients in a jar and leave for at least 24hours. Double up the recipe if you want to make more of another time.
- Fine Sugar 50g
- Apple Cider Vinegar 50g
- Red Onions 250g
- Water 40g
- Juniper Berries 1g

Make ahead – Pickled Onions (you can skip this if you don’t have time)
- Pre head oven to 180 degrees C. Once hot, add your kofta’s and cook for 15 minutes.
- Toast your pita breads
- Smear the hummus on the pita bread
- Add the kofta, hummus and sprinkle with your pickled onions.
