Sesame Oil Chicken
A comforting dish passed down through generations; straight from Grandma’s kitchen!
This simple yet flavourful recipe brings together the best of ginger, sesame oil, and chicken.

Ingredients:
- 450g mid joint chicken wings
- 30ml sesame oil (divided into 3 parts: 10ml each)
- 10g old ginger, thinly sliced
- 2 star anise
- 70g fresh black fungus
- 8 mushrooms, halved
- 3g corn starch + 10ml water (for slurry)
- Pinch of salt (optional)
- Sesame seeds, for garnish
- 2 stalks spring onions, chopped, for garnish
Chicken Marinade:
- 6ml light soy sauce
- 6ml dark soy sauce
- 6ml oyster sauce
- 10ml sesame oil
Sauce mixture (for main dish):
- 200ml water
- 6ml light soy sauce
- 6ml dark soy sauce
- 6ml oyster sauce
Instructions:
Marinate the Chicken:
Mix chicken wings with chicken marinade. Let it marinate for at least 4 hours in the fridge.
Main dish:
1. In a pot, heat 10ml sesame oil. Fry ginger slices and star anise until fragrant and slightly browned.
2. Add marinated chicken wings to the pot. Fry both sides for around 2 minutes, or until slightly charred.
3. Pour in the sauce mixture and bring to a boil. Lower heat and simmer for 30 minutes.
4. Add black fungus and mushrooms, then continue simmering for another 15 minutes.
5. Stir in corn starch mixture and bring to a quick boil to thicken the sauce.
6. Add a pinch of salt (if desired), garnish with spring onions, sesame seeds, and a final drizzle of sesame oil.
Pair with barley rice and steamed broccolini for a nourishing, well-balanced meal!
