Blackened Salmon with Corn Salsa by Expat Kitchen

This week, our friends from Expat Kitchen brought the awesome Fish Frenzy recipes to their cooking class, and we were happy to partner with them! Here is one of their amazing recipes from the class: Blackened Salmon with Corn Salsa. Easy to make and a guaranteed tasty and healthy dish for any fish lover!

Blackened Salmon with Corn Salsa

Ingredients:

Blackened Salmon Expat Kitchen Cajun Mix

Cajun mix: (to rub on fish)

  • 1 tablespoon ground sweet paprika 
  • 1 tablespoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon ground white pepper
  • 1/2 teaspoon ground black pepper
  • Pinch of cayenne pepper (add more if you like it spicier)
  • 1/4 teaspoon kosher salt 
  • 2 teaspoon olive oil

So here's what to do:

  1. Combine all the spices and herbs on a flat plate or large bowl
  2. Brush salmon with oil, turn and coat
  3. Rub spice mixture on salmon and turn and coat 
  4. Heat non-stick frying pan or BBQ on medium - high heat
  5. Add the salmon and cook for 2 minutes each side for medium or until cooked to your liking
  6. Set aside for 5 minutes to rest

Corn salsa

  • 2 corn cobs, steamed and kernels removed 
  • 2 spring onions, finely chopped 
  • 1 green capsicum, deseeded, finely chopped
  • 1 x 250g cherry tomatoes finely chopped 
  • 1 whole avocado, halved, peeled, finely chopped
  • 3 tablespoon fresh calamanci lime juice
  • 1 tablespoon fresh olive oil
  • Coriander - Chinese parsley
  • 1 stick celery, finely chopped

With these ingredients, all you have to do:  

  1. Combine corn, onion, capsicum, tomatoes, avocado and lemon juice in a bowl
  2. Season with salt and pepper

For the last step: divide salmon among serving plates and top with salsa and serve immediately!
