No Flour Cauliflower Double Chocolate Brownie Recipe
(Serves 3 - 4)
- 1 1⁄2 cup cauliflower florets
- 1 cup bittersweet chocolate chips, melted
- 1⁄2 cup milk of choice, at room temperature
- 1⁄2 cup butter/ghee, melted
- 3 eggs
- 1⁄2 cup maple syrup
- 1 cup pecans, ground
- 3⁄4 cup coconut flour
- 1⁄2 cup unsweetened cocoa powder
- 2 teaspoons cinnamon
- 1⁄2 teaspoon baking powder
- 1/8 teaspoon sea salt
Preheat oven to 180C / 350F. Grease an 8 inch square baking pan. Add cauliflower and milk to blender and puree until smooth. Add in melted chocolate, butter, eggs, maple syrup and blend until combined. In a separate bowl, combine ground pecans, flour, cocoa powder, cinnamon, baking powder, and salt. Gently fold the wet ingredients into the dry. Pour the batter into the prepared pan and bake for 30-40 mins, or until firm to the touch. Cool before slicing.
