Farfalle Pasta with Zucchini

Serves 6 - 8 Persons

Equipment:

  • Mandoline

Ingredients

  • Farfalle pasta, 1kg
  • Green Zucchini, 3 Pcs
  • Yellow Zucchini, 3 Pcs
  • Garlic Thin Slice, 30g
  • Olive Oil
  • Capers Washed, 1 Bottle
  • Mint Fresh, 1 Bunch
  • Chives, 1 Bunch
  • Parsley, 1 Bunch
  • Pine Nuts Toasted 50g

Method:

1) Lightly fry thinly sliced garlic in olive oil                                              

2) Cook pasta al dente – toss all ingredients together in a hot pan.                                              

3)Add freshly sliced green & yellow Zucchini and mix well                                      

4)Add capers and toss very well (you may add a little water or olive oil to loosen the pasta if it sticks too much.)

5)Season pasta well and add fresh mint and pine nuts to garnish and serve!
