Ingredients:
- 500g Diced Lamb
- 2 tbsp Olive Oil
- 1 Onion, chopped
- 2 Carrots, sliced
- 2 Potatoes, diced
- 2 cups Beef Broth
- 1 tsp Salt
- 1/2 tsp Black Pepper
- 1 tsp Dried Thyme
Instructions:
- Heat olive oil in a large pot over medium heat.
- Add diced lamb and cook until browned on all sides.
- Add chopped onion and cook until softened.
- Stir in carrots, potatoes, beef broth, salt, pepper, and thyme.
- Bring to a boil, then reduce heat and simmer for 1 hour, or until lamb is tender.
