Chaource is a soft cheese made from cow€™s milk in the village of Chaoruce, where it has been made since the 14th century. AOC protected since 1970, it has a soft-ripened, creamy, nutty taste and a little bit crumbly texture.
Together with 50% fat, it also contains animal rennet. Paired with wines like Chablis, Champagne, Sancerre and White.
