According to their recipe more than 125 years ago, they follow a traditional method of pasta making in which requires a careful and rigorous process:
Before being milled, De Cecco's wheat must pass strict quality controls to ensure they deliver on their promise. The semolina used for kneading is “coarse” to preserve the gluten integrity and to guarantee a “sweeter” taste. The semolina is then knead with cold water at a temperature lower than 15° C to ensure greater pasta firmness while cooking. Using rough bronze draw plates, the dough becomes porous to better capture the sauce. Lastly, the pasta is dried slowly at low temperatures to preserve the organoleptic characteristics of their wheat.
