Established in 2004, Woodbridge Smokehouse produces some of the most mouth-watering and luxuriant smoked Ocean Trout and Atlantic Salmon available today. Situated on the south-east coast of Tasmania, Woodbridge Smokehouse is set on their own 25 acre apple orchard. Their traditional hand-smoking processes using their own fruit tree wood create the distinctive and delicate flavours for which Woodbridge is renowned.
Atlantic salmon is sourced from the Huon Valley, in Tasmania's cool south-east region, a perfectly protected breeding environment. Classic smoked salmon the 'Woodbridge Way' smoked with organic apple wood chips (specifically Royal Gala, Fuji and Golden Delicious).
Cold smoking involves smoking the fish once it has been dried with controlled smoke at max 30 degrees C. This imparts the smoke flavour which is particularly mild with the hard woods and apple wood chips they use. The process gives a pronounced smoke flavour due to the long time (24hrs) in the oven.
