At just 39 years old, Bakery Artisan Original's founder Christophe Grilo already boasts a Michelin star-studded resume and 20 years of experience in bread and pastry making. Christophe became the executive pastry chef of the Hilton Singapore in 2009, and later joined the Les Amis Group to head the successful Canele Patisserie Chocolaterie. Driven by his ambition to start his own venture, the Frenchman left Canele after almost three years to launch B.A.O. in 2013. Christophe employs the traditional method of letting his bread dough ferment with natural yeast – a longer process that gives his breads a deeper flavour and denser texture.
