The Adelaide Hills is recognised as one of Australia’s finest Sauvignon Blanc growing regions: altitude, soils and weather patterns seem to draw the best from this variety.

Sourced from a vineyard in Carey Gully that Stephen has worked with for over twelve years, consistently delivering fruit freshness and natural acidity. Stylistically opposed to Sauvignon Blanc from New Zealand, a wine more akin to the food friendly nature of Sancerre or Graves.

THE VINTAGE
Mostly joyous but not without it’s challenges. Good winter rain led to strong growth with good cover in the mid row and under vine well into summer. Nervous expectation after two low yielding years muted conversations about the potential for a good year right up until harvest. No disease pressure, good canopies and plentiful bunches lead to a long ripening season. Some varieties tested patience and drew out vintage well in to May. The greatest challenge was having enough hours in the day and people to help with harvesting the plentiful and perfectly ripe fruit. What a relief!

Varietal Origin Loire Valley, France
Vineyard Carey Gully - Adelaide Hills.
Process Harvested on the 18th of March from a single block in Carey Gully. Free run juice only no pressings. Settled to clear in stainless steel for 12 days. Cold fermented for 4 weeks, racked off lees and bottled mid July. 11,650 Bottles produced.

Flavour Profile
Guava and pink grapefruit, brown lime and sea spray followed by Basil seeds,
fennel seeds and rucola. Flavours of brown lime cordial, nettle tea and pink citrus.

Structure and Texture
