Our Comte Cheese captures the essence of France. This cheese has a complex, nutty and caramelized flavor with a texture that is hard but flexible, it's a perfect addition to any cheese platter. This ancient cheese is meticulously crafted in over 190 cheese dairies, known as 'fruitières', where it undergoes a prolonged maturation process called affinage. During this period, the cheese is diligently cleaned and rubbed with salted water, resulting in a complex, nutty, and caramelized flavor with a hard yet flexible texture. The pale creamy yellow color of the cheese beautifully showcases the presence of salt crystals.

Suggested Recipe: Comté Cheese Fondue

  1. Grate 300g of Little Farms Comté cheese into a large bowl. Toss the cheese with 2 tablespoons of flour to prevent clumping.
  2. Rub the inside of a fondue pot with 1 halved garlic clove to infuse it with flavor, then discard the garlic.
  3. Pour 1 cup of dry white wine into the fondue pot and heat over medium heat until hot but not boiling. Gradually add the cheese, stirring constantly in a zigzag pattern to prevent the cheese from balling up, until the cheese is melted and creamy. Do not let it boil.
  4. Stir in 1 tablespoon of kirsch (cherry brandy) and a pinch of nutmeg. Continue to cook and stir until the mixture is smooth, about 2-3 minutes.
  5. Adjust the seasoning with salt and pepper to taste. Serve immediately with a variety of dippers like cubed French bread, blanched vegetables, and apple slices.
