Ingredients:
- 1 cup all-purpose flour
- 1/2 cup unsalted butter, chilled and diced
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 2 tablespoons cold water
- 6 fresh apricots, pitted and sliced
- 2 tablespoons honey
- 1 teaspoon lemon juice
- 1/4 teaspoon ground cinnamon
Instructions:
- In a bowl, combine flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs. Add cold water, one tablespoon at a time, until the dough comes together. Form into a disk, wrap in plastic, and refrigerate for 30 minutes.
- Preheat your oven to 190°C (375°F).
- On a lightly floured surface, roll out the dough to fit a 9-inch tart pan. Press the dough into the pan and trim the edges.
- In a bowl, toss the apricot slices with honey, lemon juice, and cinnamon. Arrange the apricot slices in a circular pattern over the crust.
- Bake the tart in the preheated oven for 35-40 minutes, or until the crust is golden brown and the apricots are tender.
- Allow the tart to cool before slicing. Serve warm or at room temperature.
