Gluten Free Protein Pancakes

Ingredients list:
- 2 eggs, whisked
- 2 heaped tbsp of Chief Nutrition's Collagen Protein Powder Creamy Vanilla
- 1 banana, mashed
- 1 tbsp flour of choice
To Garnish
- 2 tbsp yoghurt of choice
- Handful of berries
- Raw honey
Method:
- Add all ingredients to a medium-sized mixing bowl, and whisk together to create a smooth batter.
- Heat a non-stick pan over medium-high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake; cook until bubbles form and the edges are dry about 2 to 3 minutes. Flip and cook until browned on the other side. Repeat with the remaining batter.
- Stack pancakes on top of each other, spoon over yoghurt, berries and drizzle with honey.
