Poke Bowl with Sautéed Prawns and Shitake

Ingredients: (for 4 people)
Rice (250 g)
Prawns (300 g)
Avocado (sliced).
Shitake mushrooms (200 g).
Eggs (2).
Radishes (thinly sliced).
Spring onion.
Green beans (100 g).
Salt.
Zest and juice of lemon.
Preparation
- Prepare the ingredients: Slice the vegetables.
- Cook the rice according to package instructions, then drain thoroughly.
- Boil the eggs for about 8 minutes, then peel and slice.
- Sauté the prawns, mushrooms, and green beans in a frying pan with 1 tbsp of iO Black EVOO.
- Make the seasoning: In a small bowl, mix 1 tsp salt, 1 tbsp lemon juice, lemon zest, and 2 tbsp iO Black EVOO.
Assembly:
- Divide the rice into 4 bowls.
- Arrange the cooked vegetables, prawns, and radish in sections around the edge of each bowl.
- Sprinkle with spring onion and top with avocado slices and boiled eggs.
- Drizzle the seasoning over the bowls before serving.
