Simple and yummy carb swaps!

Following a low-carb diet doesn’t need to be boring — or difficult. We’ve got a range of ideas to help you stick to a keto, vegan or gluten-free diet… or because you simply feel better limiting pasta and bread.

Nuco Coconut Wraps This gluten-free, grain-free, and low-carb alternative to bread and tortillas is made with only coconut meat, coconut water and unrefined virgin coconut oil. Nuco Coconut Wraps are pliable/foldable and can be used just about anywhere that a tortilla wrap can.

Smear the Original wrap with Roza’s Gluten-Free Caesar Salad Dressing, top with leftover cooked chicken, lettuce and whatever veggies you have on hand, and roll it up burrito-style for a quick lunch.

Spread the Cinnamon wrap with your favourite nut butter or honey, top with bananas or strawberries, then fold into a triangle crêpe shape for a sweet snack or breakfast.

For a breakfast on-the-go, smash avocado onto the Turmeric wrap and top with a soft-scrambled egg, sliced peppers, and a few fresh herbs. Fold and go.

Cauliflower Rice. Substitute cauliflower rice for white rice in grain bowls, stir fries, burritos… anywhere that regular rice can be used really. It’s a great vehicle for other flavours and it adds an extra vegetable to your daily allotment.

The key to making great cauliflower rice at home is to make sure your cauliflower is fully dry. Remove all the leaves. Chop the cauliflower into large pieces. Put it in a food processor and pulse until it has the texture of rice. Don’t over process or it will become cauliflower paste!

Steam it in the oven by putting it into an oven-proof dish with a lid at 200C for 10-15 minutes depending on size of batch. Stir halfway through. Rice will be tender and similar to the texture of white rice. For something different, toss cauliflower rice with a little olive oil and salt, and spread in a single layer on a baking tray. Then roast in the oven at 220C for about 10-15, depending on size of the batch, until it’s slightly golden brown and crispy. This gives the cauliflower a nutty flavour.

Lettuce Wraps. Take a cue from Vietnamese and Thai cooking and use fresh, crispy lettuce to replace bread in your sandwich wraps. Try delicate bibb lettuce with finely chopped or ground fillings like larb-style chicken. Hearty large leaves of romaine make a perfect vehicle for heavier fillings such as larger pieces of roasted meat, fish, or even seared halloumi. And change up taco night by replacing tortilla shells with well-chilled iceberg leaves. You’ll get all the crunch and none of the carbs!
