Boquerones - Marinated White Anchovies
At Conservas Ortiz, the fresh anchovies are preserved (boquerones) using a traditional method with strict quality controls.We fillet them by hand, one by one, and marinate them in wine vinegar. Once they have reached optimum maturity, we pack them in olive oil, garlic and parsley. Their unique, delicate flavour makes them ideal for serving, dressed in balsamic vinegar and chopped onion. In order to maintain their perfect preservation, they should be stored at a temperature between 0 and 4 degrees Celsius for no longer than three months.
