Ingredients:
- 1 sheet puff pastry
- 100g Gabriel Coulet Roquefort cheese, crumbled
- 2 ripe pears, thinly sliced
- 1 tablespoon honey
- 1 tablespoon chopped walnuts
- Fresh thyme leaves
- 1 egg, beaten (for egg wash)
Instructions:
- Preheat Oven: Preheat your oven to 200°C (400°F).
- Prepare Pastry: Roll out the puff pastry on a baking sheet lined with parchment paper. Score a border around the edges with a knife.
- Add Ingredients: Spread the crumbled Roquefort cheese evenly over the pastry, staying within the scored border. Arrange the pear slices on top of the cheese.

Gabriel Coulet is a family-owned dairy since 1872, known for producing high-quality Roquefort cheese. The creamery has won numerous awards and is renowned for its traditional methods and exceptional taste.The story of Gabriel Coulet dates back to the 19th century when Guillaume Coulet, a wagoner in Roquefort sur Soulzon, began digging a wine cellar under his own house. There, he discovered cavities: natural ventilating cracks also known as the ‘fleurines’ of the Combalou hill, which made the place a privileged site to create an ageing cellar for Roquefort cheese. Guillaume officially founded the Coulet brand in 1872, with his son Gabriel succeeding him in 1906 and giving his name to what would become the illustrious family business today.
