- 225g Halloumi cheese
- 1 tbsp olive oil
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 red onion, thinly sliced
- 1 tbsp fresh mint, chopped
- 1 tbsp fresh parsley, chopped
- Juice of 1 lemon
- Salt and pepper to taste
