Suggested Recipe: Herb-Crusted Lamb Cutlets with Minted Pea Puré
- Preheat your oven to 200°C (390°F). Season 8 Lamb Cutlets with salt and freshly ground black pepper.
- In a food processor, combine 1 cup of fresh bread crumbs, 2 tablespoons of chopped fresh parsley, 1 tablespoon of chopped fresh rosemary, 1 minced garlic clove, and the zest of 1 lemon until well combined.
- Brush each lamb cutlet with a thin layer of Dijon mustard, then press the breadcrumb mixture onto the meaty part of each cutlet to coat.
- Heat 2 tablespoons of olive oil in an ovenproof skillet over medium-high heat. Sear the cutlets for 1-2 minutes on each side until browned.
- Transfer the skillet to the oven and roast the cutlets for about 5 minutes for medium-rare or until your desired level of doneness is reached.
- For the minted pea purée, simmer 2 cups of green peas in salted boiling water for 3-4 minutes until tender. Drain and blend the peas with 1 tablespoon of melted butter, a handful of fresh mint leaves, salt, and pepper until smooth.
- Serve the lamb cutlets over a spoonful of the minted pea purée, garnished with extra mint leaves if desired.
