White Wine - Sabotage Riesling
The Great Southern is renowned for its finely structured, elegant and long-lived Rieslings. Each of the 5 sub-regions is different
in the way Riesling is expressed; part of the wonder of exploring Riesling from the Great Southern.
We have utilized Riesling from 2 vineyards for this wine; one in the central Mt Barker subregion and the other in the larger
Frankland subregion.
Both components are separated into free run and pressings fractions. The free run components are settled and fermented in tank. The pressings are run direct to barrel and natural fermentation takes place. The free run component is all about lean
tight fruit and length; the barrel ferment components add texture and richness.
The 2021 Sabotage is our fourth release but we have been playing with different techniques for Riesling for several vintages. The vintage was slightly later than we have seen recently due to cooler temperatures and more rain. There was some disease pressure but overall it’s a super Riesling year with powerful yet elegant fruit drive and high natural acids.
The 2021 Sabotage has classic preserved lemon citrus, with some lime curd and wet granite complexity. The barrel fermentation
contributes richness and weight to the mid palate but the finish has typical Great Southern Riesling line with a pearskin and chalky acidity.
