Ortiz use the freshest fish (3 to 4 in a tin) which is fried in virgin olive oil and then after resting for few minutes packed by hand. Using only artisanal methods always taking care to preserve the art of fishing the origin and the freshness of the fish. Ortiz Sardines - fished in Galicia in northern Spain and prepared according to a traditional recipe from 1824.
