Buffalo Ricotta, Porcini & Truffle Ravioli Recipe

Ingredients:

  • 350g Buffalo Ricotta, Porcini & Truffle Ravioli
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Do not separate the pasta before placing in water, as it will separate during cooking. Empty contents into a large saucepan of boiling water and bring back to the boil. Simmer gently for 3-4 minutes.
  2. Remove the pasta carefully from the water using a slotted spoon to drain off excess water and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  4. Add Cream: Pour in the heavy cream and bring to a simmer. Cook for 2-3 minutes until slightly thickened.
  5. Add the cooked ravioli to the skillet and gently toss to coat with the cream sauce. Stir in grated Parmesan cheese and season with salt and pepper to taste.
  6. Transfer to a serving plate, garnish with fresh parsley, and serve immediately.
