The story of Gabriel Coulet dates back to the 19th century when Guillaume Coulet, a wagoner in Roquefort sur Soulzon, began digging a wine cellar under his own house. There, he discovered cavities: natural ventilating cracks also known as the ‘fleurines’ of the Combalou hill, which made the place a privileged site to create an ageing cellar for Roquefort cheese. Guillaume officially founded the Coulet brand in 1872, with his son Gabriel succeeding him in 1906 and giving his name to what would become the illustrious family business today.
