Malaysian Tofu Coconut Curry
Ingredients:
For the Tofu:
- 14 oz firm or extra firm tofu, pressed and cubed
- 1 tsp oil
- 2 tsp soy sauce
- 1/2 tsp garlic powder
- 1/4 tsp black pepper
- 1 tsp curry powder
For the Curry:
- 2 tsp oil
- 1/4 cup chopped onion
- 2 cloves garlic, minced
- 1 tbsp curry powder
- 1 tbsp all-purpose flour
- 3/4 tsp salt
- 1 tsp soy sauce
- 1 tsp tomato paste
- 1/2 tsp sugar
- 15 oz can coconut milk
- 2 cups mixed vegetables (e.g., zucchini, carrots, pepper, peas)
- Cilantro and lime juice for garnish
Instructions:
- In a large bowl, combine pressed and cubed tofu with soy sauce, garlic powder, black pepper, and curry powder. Toss well to coat. Heat a large skillet over medium-high heat, add oil, and cook tofu until golden on some edges. Transfer tofu to a bowl.
- In the same skillet, add another teaspoon of oil, onion, garlic, and a pinch of salt. Cook until the onion is golden.
- Add curry powder and cook for half a minute. Then add flour and mix for a few seconds.
- Add salt, soy sauce, tomato paste, and mix. If using longer-cooking vegetables like carrots, add them now and cook for 2-3 minutes.
- Add the rest of the vegetables, salt, sugar, and coconut milk. Mix well, cover, and cook for 9-12 minutes or until vegetables are cooked to preference. Add peas in the last 2 minutes of cooking.
- Taste and adjust salt and flavor. Fold in half of the tofu. Garnish with lime juice and serve over rice. Add more crispy tofu while serving in each bowl.
