Spiced Israeli Couscous Recipe

Ingredients:

  • 1 cup Israeli couscous
  • 1/2 cup lentils
  • 1/2 cup chickpeas
  • 1/2 cup sweet potato, diced
  • 1/4 cup sultanas
  • 1/4 cup almonds, chopped
  • 1/4 cup eggplant, diced
  • 1/4 cup capsicum, diced
  • 1/4 cup onion, diced
  • 1/4 cup parsley, chopped
  • 1 tbsp tomato paste
  • 1 tsp harissa powder
  • 1 tbsp lemon juice
  • 2 cups water or vegetable broth
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions:

  1. Heat 2 tbsp of olive oil in a saucepan over medium-high heat. Add 1 cup of Israeli couscous and toast until golden brown.
  2. Add 2 cups of water or vegetable broth to the toasted couscous. Bring to a boil, then reduce heat to low, cover, and simmer for about 10 minutes or until the liquid is absorbed.
  3. In a separate pan, sauté the diced sweet potato, eggplant, capsicum, and onion until tender.
  4. Add the cooked lentils, chickpeas, sultanas, and almonds to the sautéed vegetables. Stir in the tomato paste, harissa powder, lemon juice, and chopped parsley.
  5. Combine the cooked couscous with the vegetable mixture. Season with salt and pepper to taste.
  6. Serve warm as a main dish or a side dish. Enjoy your Spiced Israeli Couscous!

Store in an airtight container in the refrigerator for up to 4 days. To reheat, move the couscous to a saucepan on the stovetop with a little water and reheat until warmed through. To freeze, allow it to come to room temperature before transferring it to a freezer-safe container. It will freeze for 3 to 4 months. Thaw it in the fridge overnight before use.
