Red capsicum and broccoli provide vitamin C, which as well as being an antioxidant also helps to increase the absorption of non-haem (plant-based) iron, sweet potato is rich in beta-carotene which is converted to immune-boosting vitamin A, pumpkin is a good source of potassium, and the list goes on.
