Pomegranate Glazed Salmon with Roasted Danish Carrots and Couscous

Ingredients:

• 2 Akaroa King Salmon fillets
• 1/2 cup pomegranate juice
• 2 tablespoons honey
• 1 tablespoon soy sauce
• 1 teaspoon grated ginger
• 1 bunch Danish carrots, trimmed and peeled
• 1 cup couscous
• 1 cup vegetable broth
• 2 tablespoons olive oil
• Salt and pepper to taste
• Fresh herbs for garnish

Instructions:

1. Prepare the Glaze: In a small saucepan, combine pomegranate juice, honey, soy sauce, and grated ginger. Bring to a simmer and cook until reduced by half, about 10 minutes.
2. Roast the Carrots: Preheat the oven to 400°F (200°C). Toss the Danish carrots with olive oil, salt, and pepper. Spread them on a baking sheet and roast for 20-25 minutes, until tender and caramelized.
3. Cook the Couscous: In a medium saucepan, bring vegetable broth to a boil. Stir in couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork.
