Cocoa Avo Breakfast Pancakes for Mum ♡
(Makes about 3 medium-sized pancakes)
Ingredients:
½ ripe avocado
1 cup all-purpose flour
1 tsp baking powder
1–2 tsp cocoa powder
A dash of vanilla extract
A pinch of salt
Mum’s favourite fruits (like raspberries)
Honey (optional)
Butter for cooking
Method:
Blend the avocado, flour, baking powder, cocoa powder, vanilla, and salt until you achieve a smooth, mousse-like batter.
Heat a little butter in a pan over low-medium heat.
Spoon the batter onto the pan to your desired pancake size.
Cook until bubbles form, then flip and cook the other side until golden.
Stack the pancakes on Mum’s favourite plate, garnish with fresh fruits, and drizzle with honey if desired.
