Panettone Bread and Butter Pudding

INGREDIENTS
1 panettone (about 750gm)
2 eggs
1¼ cups milk
⅓ cup double cream
2 tbsp caster sugar
1 tsp vanilla bean paste
Finely grated zest from ½ an orange
Pinch of salt
Butter, for greasing
Icing sugar, to serve
Vanilla ice-cream, to serve
METHOD
- Preheat the oven to 180°C. Cut panettone into 3cm cubes and set aside.
- In a large mixing bowl, combine eggs, milk, cream, sugar, vanilla, orange zest and salt; whisk to dissolve sugar.
- Add panettone to custard mixture and stir gently to combine; set aside for 2 minutes to allow the bread to soak up the liquid. Meanwhile, grease a large baking dish or individual ramekins with butter. Transfer pudding mixture to baking dish, then bake for 20-30 minutes or until top is golden and the custard mixture is just set.
- Serve hot with a scoop of ice-cream and a sprinkle of icing sugar.
