Butternut Squash Soup
Ingredients:
- 1 Pumpkin - Butternut (about 1800g)
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- Salt and pepper to taste
- 1/2 cup coconut milk
Instructions:
- Peel and cube the butternut squash.
- In a large pot, heat olive oil over medium heat. Add chopped onion and garlic, sauté until translucent.
- Add the cubed butternut squash to the pot and cook for about 5 minutes.
- Pour in the vegetable broth, bring to a boil, then reduce heat and simmer for 20-25 minutes until the squash is tender.
- Use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup in batches to a blender.
- Stir in the coconut milk, season with salt and pepper, and serve hot.
