Pumpkin Soup Recipe
Ingredients:
- 500g Kent Pumpkin, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 carrot, chopped
- 1 potato, chopped
- 4 cups vegetable broth
- 1 cup coconut milk
- Salt and pepper to taste
- Olive oil
Instructions:
- Heat olive oil in a large pot over medium heat. Add chopped onion and garlic, and sauté until translucent.
- Add chopped carrot, potato, and pumpkin to the pot. Cook for about 5 minutes, stirring occasionally.
- Pour in the vegetable broth, bring to a boil, then reduce heat and let it simmer for 20-25 minutes, or until vegetables are tender.
- Use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup in batches to a blender and blend until smooth.
- Stir in the coconut milk and season with salt and pepper to taste. Simmer for another 5 minutes.
- Ladle the soup into bowls and garnish with a drizzle of olive oil or a sprinkle of fresh herbs. Serve hot.
