Sausage - Pork Apricot & Tarragon Recipe
Ingredients:
- 3 Pork Apricot & Tarragon Sausages
- 1 tbsp Olive Oil
- 1 Onion, finely chopped
- 2 Garlic Cloves, minced
- 1 Red Bell Pepper, sliced
- 1 Yellow Bell Pepper, sliced
- 1 cup Cherry Tomatoes, halved
- 1 tsp Dried Oregano
- Salt and Pepper to taste
Instructions:
- Prepare the Sausages: Heat olive oil in a large skillet over medium heat. Add the sausages and cook until browned on all sides, about 8-10 minutes. Remove sausages from the skillet and set aside.
- Cook the Vegetables: In the same skillet, add the chopped onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.
- Add Peppers and Tomatoes: Add the sliced red and yellow bell peppers to the skillet. Cook for another 5 minutes until the peppers start to soften. Add the cherry tomatoes and cook for an additional 2 minutes.
- Season: Sprinkle the dried oregano, salt, and pepper over the vegetables. Stir well to combine.
- Combine and Simmer: Return the sausages to the skillet. Reduce the heat to low, cover, and let simmer for 10 minutes to allow the flavors to meld together.
