Caramelised Onion and Cabbage Tofu Scramble
Caramelised Onions and Cabbage Tofu Scramble for Breakfast!
Ingredients:
1/2 a pack of firm tofu
1/2 small cabbage
1 brown onion
60ml of dairy-free milk (or any milk of choice)
1/2 tbsp of vegan aioli (any aioli of choice)
1/4 tsp of turmeric powder
Salt and pepper
Coriander leaves
Steps:
• Crumble the firm tofu using fingers.
• Julienne the cabbage & dice the onion
• Combine the milk, aioli and turmeric powder and lightly whip the mixture. Can add in a pinch of salt and pepper.
• Heat up olive oil in a pan, caramelised the onions and cabbage till soft.
• Add in the tofu crumbles. You can use your spatula to cut the tofu into smaller pieces as you sautéed. Cooked till slightly browned.
• Pour in the whipped mixture.
• Once all the mixture has been absorbed, turn off the heat.
• Topped with coriander leaves.
The caramelised onions and cabbage tofu crumbles breakfast plate is served with roasted kale, organic beetroot and organic sweet potatoes. Avocado and pink lady apples for freshness. A slice of seeded sourdough and passion fruit by the side.
You can also served with just a slice of sourdough and avocado.
Caramelised onions add natural sweetness to the tofu scramble and cabbage add another layer of texture. You can use any dairy free milk for the whipped mixture.
