Ingredients
6 - 8 Selva shrimps
2 Free-range eggs
1/4 red capsicum
1 garlic bulb
20ml of milk
Salt and pepper
Chili flakes
Parsley
Steps
• Pre-heat the oven at 180 degrees Celsius
• Marinade prawns with salt and pepper
• Whisk eggs with milk and a pinch of salt and pepper.
• Finely chopped the garlic & diced the capsicum
• Heat up 2 tablespoons of olive oil in a pan that can goes into the oven & sautéed the garlic
• Put the prawns in and cook for half a minute on each side.
• Take out the prawns and pour in 3/4 of the egg mixture.
• Throw in the capsicum and into the oven for 2-3 minutes
• Remove from oven and arrange the prawns back into the pan.
• Pour in the remaining egg mixture and in goes the parsley.
• Back in the oven for another 3-5 minutes to fully cook the prawns and set the top.
• Season with chili flakes [optional]
Serving the frittata with a slice of Rosemary sourdough, sliced avocado, organic iceberg lettuce and tomatoes.
Prawns are easily overcooked so I chose to cook half the egg mixture before adding the prawns back.
The time required may depend on the heat you used both on your stove and oven.
