Coconut Curry Soba Noodles
Try a delicious Coconut Curry Soba recipe made with our new Organic Thai range. It's full of nutrients, premium ingredients, and is such a satisfying meal for the whole family!
Ingredients:
For the Broth:
- 1 can coconut milk
- 4 cups vegetable or chicken broth
- 2 tablespoons red curry paste (adjust for spice preference)
- 1 tablespoon vegetable oil
- 2 cloves garlic, minced
- 1-inch piece of ginger, grated
- 1 lemongrass stalk, chopped (optional)
- 1 onion, chopped
- 1 carrot, chopped
- 1 pack green beans, chopped (250g)
- 1 red bell pepper, sliced
- 2 tablespoons soy sauce
- 1 tablespoon brown sugar (optional)
- Salt and pepper to taste
For the Curry:
- 1 pack soba noodles (or noodles of your choice)
- Protein of your choice (sliced cooked chicken, tofu, or shrimp)
- Fresh cilantro leaves for garnish
- Lime wedges for garnish
- Bean sprouts (optional)
- Sliced green onions (optional)
Instructions:

In a large pot, heat the vegetable oil over medium heat. Add the garlic, ginger, and lemongrass (if using) and sauté for about 2 minutes until fragrant.

Add the chopped onion, carrot, green beans and red bell pepper to the pot. Sauté for another 3-4 minutes until the vegetables begin to soften.

Stir in the red curry paste and continue to cook for 2 minutes, allowing the flavors to meld together.

Pour in the coconut milk and vegetable or chicken broth. Add soy sauce, brown sugar (if using), and season with salt and pepper. Bring the mixture to a simmer and let it cook for about 15-20 minutes, allowing the flavors to meld together. Taste and adjust the seasoning if needed.

While the broth is simmering, cook the soba noodles according to the package instructions. Drain and set aside.

Prepare your protein of choice (chicken, tofu, or shrimp) separately.

To serve, place a portion of cooked soba noodles into a bowl. Ladle the hot coconut curry broth over the noodles.

Add your protein of choice on top of the noodles and broth.

Garnish with fresh cilantro leaves, bean sprouts (if using), sliced green onions, and a lime wedge.
